Ingredients
- 2 cups all-purpose flour
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1-3/4 cups whole milk
- Zest of 1 lemon
- 2 tablespoons freshly squeezed lemon juice
- 1 cup fresh blueberries
- Butter for cooking
Whipped Honey Butter:
- 1/2 cup unsalted butter, at room temperature
- 2 tablespoons honey
Instructions
- In a mixing bowl, whisk together the flour, brown sugar, baking powder and salt.
- In another bowl, beat the egg and then whisk in the whole milk, lemon zest and lemon juice.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the blueberries.
- Heat a non-stick skillet or griddle over medium-high heat. Melt a tablespoon of butter on the skillet.
- Using a 1/4 cup measuring cup, scoop the batter onto the skillet.
- Cook until bubbles start to form on the surface of the pancake, then flip and cook until both sides are golden brown.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
- To make the honey butter, add the unsalted butter to a mixing bowl and beat with a fork until it is smooth and creamy.
- Add the honey to the butter and continue to beat until the honey is fully incorporated and the mixture is light and fluffy.
- Spoon the whipped honey butter on top of the pancakes and serve.
